Tasting Notes

Nose

Brown sugar, dark cherry, vanilla, toasted oak, leather and a flicker of tobacco.

Palate

Big and chewy — molasses, dried fig, maple, dark chocolate, char and warm baking spice.

Finish

Long, oaky, slightly drying, with cocoa, espresso and lingering caramel.

Noah's Mill is one of the small-batch bourbons that helped put Kentucky Bourbon Distillers — the Willett family's bottling and sourcing arm — on the map long before Willett's own distillery came back online in 2012. Bottled at a hefty 114.3 proof, it has always been the muscular, no-apologies entry in the KBD lineup, and it remains one of the more distinctive small-batch bourbons in its price bracket.

The nose is generous and old-school. Brown sugar and dark cherry lead, followed by deep vanilla, toasted oak and a leathery, almost cigar-shop note that gives the whiskey gravity. Letting it sit in the glass coaxes out tobacco, a touch of orange peel and the faintest hint of dried herbs.

On the palate Noah's Mill leans into its proof without ever feeling sloppy. The texture is thick and chewy, almost syrupy. Molasses and dried fig hit first, then maple and dark chocolate roll across the middle, and finally a wave of char and baking spice — cinnamon, clove, a flash of black pepper — gives the bourbon its backbone. A small splash of water opens up surprising stone-fruit and toffee notes without taming the structure.

The finish is long and resolutely oaky, with cocoa, espresso and burnt sugar trading off until a final dry, slightly tannic flicker reminds you that this is bourbon built around mature barrels and barrel char.

Noah's Mill is not the most polite bourbon on the shelf, and that is precisely the point. It is a fireside pour, a contemplative dram for cold nights, and one of the better-value high-proof small batches still hiding in plain sight.
