Tasting Notes

Nose

Caramel, toffee, cooked fruit, marshmallow, spice. Vanilla and toasted oak. The toasted barrel finishing adds a distinctive sweetness distinct from charred oak.

Palate

Marshmallow, coconut, cinnamon sugar, vanilla. Subtle spice and smoke. Sweet upon entry with layers of cinnamon, maple and nutmeg. The toasted oak adds a gentle, baking-spice warmth.

Finish

Light to medium — toasted oak, vanilla, spice. Clean and composed.

Bluegrass Distillers Toasted Oak uses the distillery's original mash bill — 75% yellow corn, 21% rye, 4% malted barley — barrel-aged for at least three years, then finished in toasted (not charred) oak. The toasting rather than charring creates different flavour compounds: more caramel and baking spice, less char and smoke.

The toasted oak finishing is the point of difference. Toasting heats the wood more gently than charring, preserving natural wood sugars that charring would destroy. The result is a bourbon with marshmallow sweetness, cinnamon sugar and a gentle baking-spice warmth that charred-oak maturation cannot achieve.
