Bluegrass Distillers Toasted Oak uses the distillery's original mash bill — 75% yellow corn, 21% rye, 4% malted barley — barrel-aged for at least three years, then finished in toasted (not charred) oak. The toasting rather than charring creates different flavour compounds: more caramel and baking spice, less char and smoke.
The toasted oak finishing is the point of difference. Toasting heats the wood more gently than charring, preserving natural wood sugars that charring would destroy.
