Tasting Notes

Nose

Corn sweetness, vanilla, a gentle oak warmth. The Wyoming-grown corn gives the nose a fresh agricultural quality. Beneath the sweetness, a touch of rye spice, caramel and a gentle warmth. Clean and honest.

Palate

Sweet and straightforward — caramel, vanilla, a gentle rye spice. The small-batch format adds some individuality. Mid-palate brings brown sugar, a gentle oak warmth and a clean grain sweetness. Well-made and unpretentious.

Finish

Medium, with corn sweetness and a gentle warmth.

Wyoming Whiskey is the state's first legal distillery since Prohibition, founded in 2009 in the tiny town of Kirby (population 92). The distillery uses locally grown non-GMO corn, winter wheat and barley, and draws its water from a limestone aquifer. The bourbon is aged in new American oak in Wyoming's extreme climate — blazing summers, freezing winters — which drives a dramatic maturation cycle.

The Wyoming climate produces a bourbon with good oak integration despite its relatively young age. The temperature extremes — from -30°C to +35°C — create an aggressive interaction between spirit and wood that concentrates flavour and accelerates development. The result is a bourbon that tastes more mature than its years, with a straightforward, grain-forward character.

Wyoming Whiskey is a solid, well-made bourbon from America's least likely whiskey state. The local grain, limestone water and extreme climate give it a genuine sense of place, and the quality has improved steadily since the early releases. At its price, it offers an honest, enjoyable bourbon with real Western character.
