Wyoming Whiskey is the state's first legal distillery since Prohibition, founded in 2009 in the tiny town of Kirby (population 92). The distillery uses locally grown non-GMO corn, winter wheat and barley, and draws its water from a limestone aquifer. The bourbon is aged in new American oak in Wyoming's extreme climate — blazing summers, freezing winters — which drives a dramatic maturation cycle.
