It is, in many ways, a radical proposition in Irish whiskey: that where the grain grew matters as much as what happens to it inside the distillery walls.

I'll be honest — when I first encountered Waterford's farm-by-farm approach, I was sceptical. Terroir is well-established in wine, less so in whisky, where distillation and maturation tend to dominate the conversation. But after spending time with the Sheestown 1.1, I find myself more open to the argument than I expected.
