Tasting Notes

Nose

Fresh-cut grass, green apple, mint leaf, basil, pear and a delicate wisp of woodsmoke.

Palate

Crisp green orchard fruit, kiwi, cucumber, gentle malt sweetness, soft herbal smoke and mineral freshness.

Finish

Clean and refreshing with lingering smoke, mint and green apple — like exhaling forest air.

First Impressions

If Yamazaki is contemplative temple incense, Hakushu 12 is the morning forest. It is Japan's most botanical-tasting malt — green, fresh, faintly smoky, and unlike anything in Scotland.

Distillery & Heritage

Founded by Suntory in 1973 in the forests of the Southern Japanese Alps at the foot of Mount Kaikomagatake, Hakushu sits at over 700 metres — one of the highest distilleries in the world. Its soft granite spring water and cool mountain air give the spirit its signature crispness, while a touch of lightly peated malt brings the whisper of smoke.

Tasting Notes in Detail

The nose is astonishingly herbal — basil, mint, fresh leaves, green apple. The palate is light and lively, with crisp orchard fruit, cucumber freshness and a delicate ribbon of bonfire smoke.

Verdict

One of the most distinctive single malts in the world. Try it as a highball with soda and a mint leaf — Japan's national serve.
