The Deanston 18 Year Old Cognac Cask finish is one of the more thoughtful expressions in the distillery's recent catalogue. Matured for the majority of its life in refill American oak — which preserves the waxy, honeyed Highland character Deanston has cultivated since the 1960s — and finished in French Cognac casks, it is bottled at 46.3% ABV, non-chill-filtered and naturally coloured.
Deanston's history as a former cotton mill distillery on the Teith gives it an idiosyncratic production set-up: open-top mash tun, long fermentations, water-cooled worm tubs replaced with shell-and-tube condensers, and the aforementioned hydroelectric plant. The spirit that emerges is heavier and more cereal-driven than most Highland neighbours, and it tends to reward long maturation.
At 18 years the base whisky has developed all the classic Deanston markers — beeswax, honey, orchard fruit and a faintly oily texture — and the Cognac finish layers on a delicate vinous complexity. Cognac casks, being smaller and previously used for grape spirit, contribute a softer, more aromatic influence than wine casks, and the match here is elegant rather than dominant.
This is arguably one of Deanston's finest recent limited releases, and a strong case study in how to use a finishing cask without losing the distillery voice.
