First Impressions
Caol Ila — pronounced 'cull-eela' — is Islay's largest distillery yet one of the least known, as much of its output goes into Johnnie Walker blends. The 12 Year Old, launched in 2002, has a reputation for the lightest Islay peat: the smoke is simply less brash, allowing sweet and maritime notes to emerge.
Tasting
The nose is sweet and grassy with soft peat and coastal salt. On the palate at 43%, soft entry with dry spicy peat and chocolatey malt. The finish is short with grassy malt and brine.
The Verdict
Caol Ila 12 earns an 8 — the perfect entry to peated Scotch. Peat whispers rather than shouts, revealing maritime sweetness. At £42, Islay's gentle giant.
