Distillery & Heritage
Bimber was founded in 2015 in Acton, west London, by Polish-born Dariusz Plazewski, whose family has distilled for four generations. The distillery does everything by hand — floor-malted barley sourced from a single Hampshire farm, open wooden washbacks, seven-day fermentation and direct-fired copper pot stills. The name 'Bimber' is Polish slang for moonshine.
Tasting Notes in Detail
For a three-year-old whisky the depth is remarkable. Ex-Bourbon casks dominate the profile, giving the soft fruit and vanilla, while the long ferment delivers an almost tropical estery lift.
