The Balvenie DoubleWood was a pioneer — Malt Master David Stewart MBE developed the double maturation technique here, ageing the whisky in ex-bourbon barrels before finishing for nine months in ex-Oloroso sherry casks. This innovation, now widely imitated, remains definitive at its source. A Speyside distillery that still grows its own barley and maintains its own cooperage and floor maltings.
Tasting
The nose greets with sweet peat and flowers, with successive nosing revealing apple juice and almonds. Fresh pears, green apples, and lemongrass provide Speyside freshness. On the palate at 40%, a smooth combination of nuts, cinnamon apples, and delicate sherry. Dark chocolate-dipped cherries and pecans emerge mid-palate. The finish is medium length with gentle warmth and a pleasant drying effect.
The Verdict
Balvenie DoubleWood 12 earns an 8 — a classic Speyside gateway that invented its own category. Nothing that will blow you away, but something that rewards every sip and belongs in every collection as a starting point. At £49, the whisky that taught the world about cask finishing.
