Balcones has been one of the most exciting stories in American craft whiskey over the last decade. What To Expect

The 65.7% ABV means you're getting serious value in terms of pure whisky per pound — add a few drops of water and this bottle will stretch further than you'd think. It's not a beginner's dram, and it's not trying to be. It's a whisky for people who want to taste something with genuine character and intensity, and on that front it delivers.

If you're someone who's been curious about what Texas whiskey can do, or if you're tired of reaching for the same bottles and want something that'll genuinely surprise you, this is well worth the price of admission. Four years, full proof, zero compromise.

Add water gradually, a few drops at a time, until the heat backs off enough for the flavour to come through clearly. If you're feeling adventurous, this kind of high-proof bourbon is absolutely spectacular in an Old Fashioned. Use a rich demerara syrup (2:1 ratio), two dashes of Angostura, and a wide orange peel expressed over the top. The proof means the whisky stands up to the dilution from the ice and still tastes like whisky, not a sugar drink. That's the whole point of a good Old Fashioned — the spirit leads, everything else just frames it.
