Nose

Yellowstone Bourbon Finished With Toasted Staves: Orange, vanilla, candy corn, brown sugar and warm, slightly melted butter dance out of the glass into my nostrils. The whole smell is very ethereal and light, like floating somewhat on a cloud.

Daviess County Medium Toasted Barrel Finish Kentucky Stra...: Spice and dried fruits jump off the dram. Blackcurrants, pomanders and vanilla odors appear initially and then withdraw to hazelnuts and cedar.

Both whiskeys present distinct aromatic profiles. The differences on the nose already hint at the divergent tasting experiences to come.

Palate

Yellowstone Bourbon Finished With Toasted Staves: Oak, spice, caramel, buttered popcorn, green apple and peppercorn zing around my mouth, with only some vanilla milling around the edges. The finish is a quick pop and then fades pretty fast, not completely wowing or disappointing me – it is just kind of there, much like this bourbon in general.

Daviess County Medium Toasted Barrel Finish Kentucky Stra...: A nice bold vanilla burst with thick leather and spicy ginger. Pumpkin pie spices of cinnamon and nutmeg come to the fore, shifting to a palate full of oak… a lot of rich oak. It has an unexpectedly smooth finish of walnuts and caramel.

On the palate, the character of each whiskey really comes to life. This is where personal preference plays the biggest role.
