Nose
Vanilla mousse, candied zest, toffee apple, light oak shavings. Malt-forward initially — chaff and husks — then fruitiness with honeysuckle, fudge, citrus, peach and pear drops.
Palate
Lingering sweet cream, dried plantain, fresh-cut pear. Crème caramel, gentle pear, ripe bananas, melon. A nutty, peppery quality from the column distillation. The 40-plate column adds distinctive character.
Finish
Nutty and peppery. Clean and modest.
