Nose
Bright, fresh — lemon meringue. Golden almonds, honeyed fruits. A clean, inviting opening that reflects the Cheshire barley and wild yeast fermentation.
Palate
Sweet honeycomb, soft butter, green apples. The English oak finishing adds a distinctive woody note. Smooth and flavourful. The wild yeast fermentation creates subtly different flavour compounds from conventional distiller's yeast.
Finish
Soft wood, burnt matchsticks. A gentle, composed close.
