Old World 12 is WhistlePig's love letter to wine-cask finishing. Overseen by the late master distiller Dave Pickerell, the whiskey is a 12-year-old straight rye finished in a trio of European wine casks — Madeira, Sauternes and port — and then married together into a single bottling. The result is a rye that drinks with the poise of a well-aged fortified wine without losing its grain backbone.
The signature of Old World 12 has always been its marriage ratio: Pickerell would blend samples on the fly until the balance between the three finishes sang. Madeira brings dried fruit and nutty depth, Sauternes lends honey and apricot, and port adds a plush red-fruit silkiness. Bottled at 86 proof (43% ABV), it's gentle enough to sip and complex enough to linger over.
The nose is immediately luxurious — honeyed rye, dried apricot, fig, orange marmalade and sweet oak spice, with a faint whisper of walnut from the Madeira's influence. There's a perfumed floral lift underneath that speaks of the Sauternes cask.
The palate is rich and rounded, coating the mouth with caramel, stewed stone fruit, clove and dark honey. A silky port-wine thread runs through the centre, bringing notes of black cherry and plum, while the rye's peppery backbone keeps the whole thing from tipping into cloying territory. Mid-palate reveals a flash of dark chocolate and candied ginger.
The finish is long and elegant — lingering dried fruit, baking spice and a gentle oak warmth that fades like a sunset rather than a slamming door.
