Tasting Notes

Nose

Vanilla pod, buttered corn, toasted oak, ripe pear and a cool whisper of mint.

Palate

Creamy and bright — caramel, cinnamon toast, baked apple, white pepper and a flicker of menthol.

Finish

Medium-long, oak-spiced and clean, with honey and a faint mineral coolness lingering at the back.

Single barrel bottlings are an act of trust. Every bottle in the run came from one cask, hand-picked from one corner of one warehouse, and what you taste is the whim of that particular barrel rather than a master blender's averaged-out signature. George Dickel's Single Barrel 9 Year leans into that idea, drawing nine-year-old Tennessee whiskey from individual barrels and bottling each one at a friendly proofed-up strength that lets the cask's character speak.

The Dickel house style is built on a few quiet decisions. The grain bill leans heavily on corn with a small but expressive measure of rye and barley. The new make is chilled before it drips through the sugar-maple charcoal — Cascade Hollow's particular twist on the Lincoln County Process — and the spirit is then matured in single-storey warehouses rather than the sky-scraping rickhouses of Lynchburg, giving a slower, gentler maturation curve.

You can taste all of that here. The nose is bright with vanilla pod, buttered corn and toasted oak, lifted by Dickel's familiar cool, slightly minty edge. The palate is creamy and well-defined: caramel, cinnamon toast, baked apple and a peppery tickle from the rye, while the finish lands medium-long and oak-spiced with a whisper of honey and that faint mineral coolness that Cascade Hollow puts on everything it makes.

This is a brilliant pour for anyone who has only known Tennessee whiskey through its biggest neighbour. It is precise, characterful and reasonably priced for a nine-year single barrel at this strength. Drink it neat in a Glencairn and let the cask have its say.
