Tasting Notes

Catoctin Creek's Distiller's Edition Cask Proof is the uncut, undiluted version of the distillery's flagship Roundstone Rye — the same 100% organic rye mash bill as the standard release, but bottled directly from the cask at full strength. It's a limited offering that lets drinkers taste the whisky as Scott Harris knows it in the warehouse.

Founded in 2009 in Purcellville, Virginia, Catoctin Creek takes its name from the creek that flows through the countryside west of Washington, D.C. The distillery's commitment to organic grain and single-grain rye has earned it a devoted following and numerous American craft whisky accolades.

At cask strength, the nose is concentrated and powerful — rye spice, toasted oak, and dark caramel dominate, with stewed orchard fruit and a flourish of pepper weaving through. The palate is massive and oily, coating the mouth with honeyed vanilla, cinnamon, and that unmistakable rye pepper. A splash of water opens up hidden layers of fruit and mellows the oak without dulling the grain's voice.
