Pour it neat and let it sit in the glass for five minutes — at 60.7%, the whisky needs a moment to open up. Then add water gradually, a few drops at a time. I find that whiskies at this strength often transform dramatically with even a small addition of water, and the PX sweetness should bloom beautifully as the ABV comes down. A classic Glencairn glass is ideal. This is an after-dinner dram, something to sit with rather than rush through.
