Nose
Dread River Straight Bourbon: I got so much on the nose from this whiskey, starting with a chemical, inky aroma. Essence of sun-soaked varnished wood, not a classic bourbon nose at all, followed by what can only be recalled as Honeycomb cereal milk.
Bib & Tucker Double Char Bourbon: Smells like a crisp fall day. I get pie spice, sap, and pine cones. Its less sweet on the nose than many bourbons, but I didnt find a particular smoky scent, either.
Both whiskeys present distinct aromatic profiles. The differences on the nose already hint at the divergent tasting experiences to come.
Palate
Dread River Straight Bourbon: and offer a whiskey that greatly complements my favorite old-fashioned recipe. The mission statement featured on the distillerys website reads as follows, Dread River symbolizes the chasm between us and where we wanted to go, the relentless torrent of issues and roadblocks, and the frigid fear of failure. In making this distillery a reality, we realized that overcoming our fears isnt just something we did; its who we are. For us, DREAD is not a paralytic. Its an inspiration, a challenge just waiting to be accepted. Our goal is to inspire our friends to face their fears with us. I must say, I appreciate a brand that embraces the darkness and fear that inevitably comes from any new venture. And to enter a market that some may consider over-saturated without any guarantee of success is
Bib & Tucker Double Char Bourbon: This is a mellow whiskey, first and foremost. The relatively low alcohol content probably contributes to that sense, with a general lack of ethanol up front. I taste smoked or cured meat, brown sugar, and savory potato chips. More of the traditional bourbon flavors, like caramel and vanilla, reveal themselves in the relatively long finish. Bib & Tucker drinks fine straight, but opens up nicely with a little bit of water.
On the palate, the character of each whiskey really comes to life. This is where personal preference plays the biggest role.
Finish
Dread River Straight Bourbon: Comments: Mash bill of 60% corn, 30% wheat, and 10% malted barley. 90 Proof (45% ABV)
Bib & Tucker Double Char Bourbon: Comments: Mash bill undisclosed, but Bib & Tucker says its sourced from a distillery in Tennessee (Dickel?); 88 proof/44% alcohol by volume; available nationally; MSRP of $54.99
The finish can make or break a whiskey. A long, satisfying finish keeps you coming back for another sip.
