Tasting Notes

Nose

That pot still signature lifts immediately — green apple skin, barley sugar, a rumble of black pepper and clove. Beneath, ex-bourbon vanilla and a faint dusting of cocoa. Honest and quietly assertive.

Palate

Oily, almost chewy. Cinnamon toast, baked pear, dark honey, then the spice arrives — pepper, cardamom, allspice. The wine cask portion adds a soft red-fruit ripple beneath the heat.

Finish

Long and warming, drying into clove, oak, and a final lick of orchard fruit. The kind of finish that makes you reach for the glass again before you mean to.
