Tasting Notes

Nose

Juicy autumnal fruit — plum, pear, apple crumble. Rich caramel, pineapple. The five-wood hybrid cask adds unusual breadth to the opening.

Palate

Syrupy — charred oak, barbecued mango, caramelised tropical fruit. Vanilla pod. The five different wood types — Portuguese, American, French, Hungarian oak and chestnut — each contribute different flavour compounds. Quite different from typical Irish whiskeys.

Finish

Creamy fruit and nut chocolate, runny caramel. Christmassy nutmeg, clove, orange oil, brown sugar. Caramelised pineapple. Long and composed.
