The nose is fantastic — dark cherry, vanilla, toasted grain — but the palate at cask strength is a bit hot and one-dimensional until you let it sit for 20 minutes. With water it smooths out into a solid pour with nice oak and toffee notes. At nearly £100 I'd say it's fairly priced but there are competing single barrels I'd reach for first.

Had to add a few drops of water to really open it up, and then it turned into this gorgeous brown sugar and baking spice bomb. For a single barrel bourbon at this price point, I think it's a steal honestly.

The 61.5% ABV means it warms you right through — almost too intense neat but a splash of water finds the sweet spot. I'd buy another bottle without hesitation.

There's this earthy, wheaty quality underneath all the classic bourbon sweetness that sets it apart from the usual Kentucky stuff. I drink mine with a single ice cube and it holds up beautifully even at that proof. Really impressed with what this distillery is doing.
