Tasting Notes

Nose

Rich and layered — anise, liquorice, dark chocolate, citrus peel, vanilla, red apple, buttered sourdough, chalky minerality — unusual for Irish

Palate

Bright grapefruit and lemon zest up front, then toffee sweetness, pine, juniper-like spice, raw honey, ginger — a herbaceous, savoury quality developing

Finish

Medium-long — fresh mint, mixed spice, lingering dark chocolate bitterness — rewards time and attention

One of Ireland's first purpose-built craft distilleries in modern times. Founded 2012 by Porterhouse Brewing's Oliver Hughes and Liam LaHart on the Dingle Peninsula, Kerry's wild Atlantic coast. Small-batch, copper pot stills in a converted sawmill. Triple-distilled from 100% malted barley. 39% ex-bourbon, 61% ex-Pedro Ximénez sherry casks. Non-chill filtered, 46.3%.
