Barrell Dovetail is a fascinating blend of influences — you get rum and port cask sweetness layered over that big American whiskey backbone. At 62.7% ABV it absolutely needs a splash of water to open up, but once it does the dried fruit and chocolate notes are incredible. Paid around £93 which felt fair for something this unique.

I keep coming back to this one but I'm not sure the price tag is justified. Neat, there's a lovely cherry and dark berry thing going on from those wine cask finishes, and the proof gives it serious weight. For £93 though I'd probably reach for a few other bottles first.

Once I got past the alcohol burn there's genuinely interesting stuff happening — dark fruit, mocha, a bit of honey sweetness. It's a sipper that demands patience and water.
