Tasting Notes

Nose

Ripe peach, apple, toffee, honey, toasted malt, caramel, vanilla, cinnamon, ginger, oat biscuits in custard — rich and intense

Palate

Sweet caramel burst, toast and honey, black pepper building, dried apricots, cinnamon, oak spice — rich and full-bodied, the Texas heat accelerating maturation

Finish

Long — toasted oak into dark chocolate, lingering Brazil nuts, the new American oak leaving its mark boldly

Expert Review

7.5/10

Founded 2008 in Waco, Texas by Chip Tate — under a bridge in a former welding shop. America's first Texas whisky distillery. 100% malted barley, pot-distilled, aged in new American oak, non-chill filtered at 53%. Initially gained fame for its blue corn 'Baby Blue' whisky. Tate departed after a legal dispute in 2014. A Texas craft pioneer that pushed boundaries before the American single malt category was formally defined.
