Tasting Notes

Nose

Complex — oaky at first, then sweet and fruity. Figs, plums, raisins from the sherry influence, with hints of cocoa. Sultanas and oloroso sherry, lemon and orange peels with honeyed cigar box. Gentle smoke rising beneath.

Palate

Full-bodied with sherried peels and winter spice, crème de cacao and peppery oak. Butterscotch, brown butter, toffee, dried pears and apple. The Gonzalez Byass oloroso gives it a quality and generosity of sherry character.

Finish

Long and spicy — walnut, salty melted butter and a gentle oak grip. A composed, satisfying close.

Tobermory 15 Year Old was matured entirely in Gonzalez Byass oloroso sherry casks — a premium wood source that gives this expression a richness and quality of sherry influence that distinguishes it from the distillery's other releases. The Gonzalez Byass name guarantees genuine sherry provenance, and the fifteen years allow the wood and spirit to reach genuine integration.

The result is Tobermory's most sherried expression. The harbour-front distillery's naturally maritime, unpeated spirit absorbs the oloroso influence beautifully, developing layers of dried fruit, chocolate and winter spice that the younger 12 Year Old cannot achieve. The combination of island freshness and sherry richness creates a whisky with real character.

At 46.3%, non-chill-filtered and natural colour, the presentation reflects the quality of the contents. Some reviewers describe it as a sherry bomb with a wilder character lurking beneath — the Mull terroir asserting itself through the generous wood. This tension between civilised sherry and wild island is what makes Tobermory 15 compelling. A Mull whisky in its finest clothes, but still unmistakably island.
