Thomson Whisky was founded by Rachael and Mathew Thomson in Auckland, beginning life as an independent bottler before moving into distillation. They became famous for pioneering manuka-smoked malt — using the native New Zealand tree in place of peat — and have been instrumental in defining a New Zealand whisky identity.
