The Whistler has become one of the more interesting names to emerge from Ireland's new wave of independent bottlers. PX I Love You — a name that wears its heart on its sleeve — is a single malt Irish whiskey finished in Pedro Ximénez sherry casks and bottled at a respectable 46% ABV without chill filtration. It is, in many ways, a statement of intent: rich, uncompromising, and unapologetically indulgent.

The PX cask influence is the defining characteristic here. Pedro Ximénez is the sweetest of the sherry styles, producing casks saturated with dried fruit, dark sugar, and a near-syrupy intensity. When applied to Irish single malt — a spirit that tends toward clean, cereally elegance — the result can be transformative. The question is always one of balance: does the cask complement the spirit, or smother it? In this case, I think The Whistler has largely got it right.

At 46% and non-chill filtered, the whiskey retains a weight and texture that cheaper bottlings in this category often lack. That decision alone elevates it above much of what sits on the shelf at this price point. You can expect the spirit to carry real body, with the kind of oily mouthfeel that rewards patience in the glass.

What to Expect

Without confirmed distillery provenance, I cannot speak to the specific still character or wash bill behind this single malt. What I can say is that The Whistler's bottlings have consistently drawn from quality stock, and the PX I Love You sits comfortably in the tradition of sherry-finished Irish whiskeys that have gained serious traction over the past decade. Think rich dried fruit — raisins, dates, fig — layered over the gentle malt sweetness that Irish single malt does so well. The Pedro Ximénez influence will likely push this toward the dessert end of the spectrum, with dark chocolate and sticky toffee notes common to this style of cask.

The NAS designation is worth noting. It is not inherently a negative — some of the most interesting whiskeys being released today carry no age statement — but it does mean the distiller is asking you to trust their blending decisions rather than relying on the reassurance of a number on the label. At £60.50, this sits in a competitive bracket where transparency matters, though the quality of the liquid goes a long way toward justifying that ask.

The Verdict

I have enjoyed my time with this bottle. The Whistler PX I Love You is a well-constructed, flavour-forward Irish single malt that delivers on its promise. The PX cask finish provides genuine depth without overwhelming the base spirit, and the 46% bottling strength gives it the structural integrity to carry all that sweetness without becoming cloying. At £60.50, it faces stiff competition from both Irish and Scotch bottlings, but it holds its ground admirably. A 7.6 out of 10 reflects a whiskey that does what it sets out to do with confidence and care — not a world-beater, but a genuinely enjoyable dram that I would happily recommend.

Best Served

Pour this one neat in a Glencairn and give it ten minutes to open up. The PX influence benefits enormously from a little air, and a few drops of water will help tease apart the layers of fruit and malt. If you are feeling sociable, it also makes a surprisingly good base for a Highball — the sherry sweetness pairs beautifully with the effervescence, creating something closer to a sparkling dessert wine than a conventional whisky and soda. But start neat. Always start neat.
