Starward Nova — from David Vitale's Port Melbourne distillery, founded in 2007. Vitale was mentored by Australian whisky godfather Bill Lark and had a breakthrough idea: mature whisky exclusively in local red wine barrels rather than traditional ex-bourbon or sherry casks. Australia's world-class wine regions were right on his doorstep.
The Wine Barrel Concept
Matured entirely in Australian red wine barrels — Shiraz, Cabernet Sauvignon, Pinot Noir — from Barossa Valley, Yarra Valley, and McLaren Vale. Melbourne's volatile climate ('four seasons in one day') causes rapid barrel expansion and contraction, accelerating maturation dramatically. Nova won Best Craft Distilled Whisky in the World in 2016.
Tasting
Big red berry nose with honeysuckle and orange blossom. Chocolate raspberry pudding palate with vanilla and toasted baking spice. The finish brings dry wine tannins — distinctly Australian, a natural bridge for wine drinkers. Unlike any Scotch or bourbon.
The Verdict
Starward Nova earns a 7.5 — a genuinely original whisky that proves Australia has its own voice, not an echo of Scotland. The wine barrel maturation creates something unique and the Melbourne climate does the rest. At £38, excellent value for a world-class craft distillery. The future of world whisky.
