Spirit of Hven distillery sits on the small island of Hven in the Öresund strait between Sweden and Denmark — the same island where astronomer Tycho Brahe built his observatory in the sixteenth century. The Seven Stars series is named for the stars of the Ursa Major constellation, and each release showcases the distillery's organic, grain-to-glass approach. The barley is organically grown, the water drawn from the island's own wells, and the maturation influenced by the maritime climate of the Öresund.

Spirit of Hven is one of the most meticulous small distilleries in Europe. Every stage of production is controlled with scientific precision, from the organic farming of the barley to the custom-designed stills to the careful cask selection.
