Tasting Notes

Nose

Sticky dates, fig jam, dark muscovado and a lick of walnut oil. Vanilla hums beneath.

Palate

Rich and syrupy — raisin, prune, treacle tart and toasted hazelnut with a mint-cool edge.

Finish

Long, sweet and slightly drying, oloroso-style oak and dark chocolate.

First Impressions

There is nothing subtle about a PX finish done well, and Slyrs leans in with conviction. The nose is immediately decadent — think Christmas pudding left to soak on a Bavarian windowsill.

Distillery and Heritage

Slyrs Destillerie, founded by Florian Stetter in 1999 at Neuhaus am Schliersee, built its reputation on new American oak maturation. The cask finish series, which includes Oloroso, Pedro Ximenez, Port and Sauternes, takes the house spirit into European wine wood for a secondary maturation that transforms the base malt entirely. The PX expression is bottled at 46% without chill filtration.

Tasting Notes in Detail

The PX casks lay a thick blanket of raisin and fig over the Slyrs vanilla backbone, but the underlying malt holds its shape — crisp barley and a clean alpine freshness keep the sweetness from tipping into cloying territory. Water opens up milk chocolate and a faint espresso note.

Verdict

A dessert dram with Bavarian manners. The sweetness is earned, not sprayed on.
