Tasting Notes

Nose

Bourbon-cask example: vibrant pineapple, vanilla custard, fresh-cut oak and orchard apple. Hints of coconut shavings and lemon zest, with a bright cereal sweetness underneath.

Palate

Full-bodied and warming — rich vanilla, baked apple, honeycomb and toasted oak spice. Cask strength brings concentration without aggression, and a drop of water unlocks tropical fruit and barley sugar.

Finish

Long, oaky and gently peppery, with vanilla and citrus oils trailing off into a clean, malty close.

Signatory's Cask Strength Collection has been the benchmark for single-cask transparency since the late 1980s. Each bottle lists the distillery, vintage, cask number, cask type, number of bottles produced and the dates of distillation and bottling.

Distillery & Heritage

Andrew Symington founded Signatory Vintage in 1988 from a small Edinburgh office, building a reputation for buying exceptional single casks from across Scotland. In 2002 he acquired Edradour — then the smallest distillery in Scotland — giving Signatory both a home and a working distillery. The Cask Strength Collection sits above the standard Un-Chillfiltered range and is where Symington's best casks find their home.

Tasting Notes in Detail

The Cask Strength Collection rotates constantly, but the house signature shines through every bottling: clean cask selection, no chill-filtration, no colouring, and bottling strength that respects the spirit. Bourbon casks tend toward pineapple and vanilla, sherry casks toward dried fruit and walnut, and the occasional refill hogshead lets the distillery character speak loudest. Each release is a snapshot of one cask, on one day.
