Tasting Notes

Nose

Old oloroso, dark honey, prune, leather-bound book, sandalwood, dried rose and aged orange marmalade.

Hibiki 30 is the apex of Suntory's blending art, a whisky composed entirely from malts and grain whisky aged a minimum of three decades. Drawn from the deepest stocks at Yamazaki, Hakushu and Chita, it represents what Suntory's master blenders consider the absolute summit of harmony — the meaning of Hibiki itself.

It has been crowned World's Best Blended Whisky at the World Whiskies Awards on multiple occasions and is one of the most highly decorated whiskies in any category, anywhere. Annual releases are vanishingly small, and the bottle — the iconic 24-facet Hibiki decanter — has become an object of reverence among collectors.

The nose is unmistakably aged: old oloroso, dark honey, prune, the dry warm scent of a leather-bound book, sandalwood and dried rose. Aged orange marmalade gives a citrus brightness beneath the depth.

The palate is profound and serene. Figs, dark chocolate, treacle and candied ginger arrive in slow procession, then sandalwood and dried apricot, all carried on a deep oaken resin. There is no heat, no edge — only an extraordinary stillness, the texture of polished stone.

The finish is vast and regal. Sherried fruit and oak spice fade through minutes, giving way at the very end to the haunting incense of mizunara. Hibiki 30 is whisky as ceremony, as memory, as time itself bottled — a true and singular masterpiece.
