Tasting Notes

Nose

Highly aromatic — marshmallow, caramel. A distinct salinity reflecting Oaxacan terroir. The ancestral blue corn gives the nose a character quite different from standard yellow corn.

Palate

Complex — marzipan, vanilla, dark chocolate. Oily, unctuous mouthfeel typical of high-quality corn distillation. The four years in bourbon casks in Mexico provide the base, with 6-12 months in virgin Limousin oak in Cognac adding French refinement.

Finish

Rounded — surprising pops of raspberry alongside cardamom and oak spice. The Franco-Mexican journey shows in the close.

FAIR Oaxaca Whiskey uses ancestral blue corn from Oaxaca, Mexico — double-distilled in copper alembic stills, aged four years in single-fill bourbon casks in Mexico, then finished for 6-12 months in virgin Limousin oak casks in Cognac, France. The result is a whiskey that spans two continents and two distilling traditions.

The ancestral blue corn gives FAIR Oaxaca a character reminiscent of Abasolo and early Balcones — roasted, nutty, with a density that modern yellow corn cannot match. The Mexican bourbon maturation provides vanilla sweetness, and the French Limousin finishing adds a Cognac refinement that is FAIR's distinctive touch.
