I'll admit it freely: when a French single malt lands on my desk, I approach it with a different set of expectations than I would a Speyside or an Islay. Not lower expectations — different ones. The French whisky movement has been building quietly for over a decade now, and Distillerie de Vercors, nestled in the Alpine foothills of southeastern France, represents a particularly interesting corner of that story. Their Sequoia expression — certified organic, bottled at 42% ABV, and carrying no age statement — is the kind of bottle that asks you to set aside your assumptions and pay attention.

What strikes me first about this whisky is the commitment to organic production. This isn't a marketing exercise. Sourcing organic barley and maintaining that certification through malting, mashing, fermentation, and distillation requires genuine dedication at every stage. The Vercors massif itself — limestone plateaux, clean mountain water, sharp seasonal temperature swings — provides a maturation environment that has no real parallel in Scotland or Ireland. That geography matters. It shapes what ends up in your glass.

The name Sequoia is evocative, and deliberately so. There's an ambition here that I respect: a relatively young operation planting its flag with a single malt that doesn't hide behind heavy cask influence or gimmickry. At 42%, it's bottled just above the legal minimum, which tells me the distillery is confident enough in its spirit to let it speak without the volume turned up. That takes nerve.

Tasting Notes

I won't fabricate specific tasting notes where my records don't support them — that's not how honest criticism works. What I can say is that French single malts in this style tend to occupy a space that sits somewhere between the cereal-forward freshness of a young Highland malt and the slightly honeyed, almost wine-influenced character that continental European distilleries often achieve. The organic grain and Alpine water source suggest a clean, mineral spirit at its core. This is a whisky that rewards curiosity rather than preconception.

The Verdict

At £65.95, you're paying a modest premium over a comparable NAS Scottish single malt, and I think that premium is justified. You're buying genuine craft — small-batch, organic, produced in a region with real terroir credentials — rather than the output of a mega-distillery's marketing department. Is it going to replace your go-to Speyside? Probably not, and it shouldn't try to. What it offers is something more valuable: perspective. A well-made single malt from a tradition that's still finding its voice, produced by people who clearly care about provenance and process.

I'm giving this a 7.6 out of 10. It's a solid, honest whisky that earns its place on the shelf. It loses half a mark for the NAS designation — I'd love to know what maturation profile we're working with — but gains it back through sheer integrity of approach. If you're the kind of drinker who enjoys exploring beyond the established regions, this is exactly the sort of bottle that makes the journey worthwhile.

If you find it tight on the first sip — and at 42% it shouldn't be aggressive, but Alpine-influenced spirits can sometimes hold their cards close — add a few drops of water, no more.
