Tasting Notes

Nose

Crisp pear, vanilla cream, toasted barley and a faint waft of mountain herbs.

Palate

Bright and oily at once — orchard fruit, malted milk biscuit, a flicker of red berry from the Pinot wood and warm honey.

Finish

Medium, clean, with white pepper and a return of vanilla.

First Impressions

Just Hatched is exactly what its name promises — Cardrona's inaugural single malt release, drawn at the legal minimum of three years and presented at 46% ABV. It is a young whisky proudly worn as such, an opening statement from one of New Zealand's most ambitious distilleries.

Distillery & Heritage

Cardrona Distillery sits beneath the Pisa Range in Central Otago, founded in 2015 by Desiree Reid. The distillery uses Forsyths copper pot stills, 100% New Zealand malted barley and pristine alpine water from the Cardrona Valley. From day one Reid declared an intention to produce world-class single malt, and the maturation programme spans ex-Bourbon, French oak Pinot Noir casks from neighbouring Otago wineries and ex-Sherry butts.

Tasting Notes in Detail

What surprises about Just Hatched is its composure. The new-make character is still present — fresh, fruity, slightly grassy — but the cask influence is already integrating, lending a gentle red-fruited sweetness and creamy oak backbone.

Verdict

A fascinating snapshot of a distillery in motion. Buy it as much for the story as the dram.
