Bushmills 25 Year Old is among the rarest expressions in the distillery's core line-up, released in limited annual batches. Triple distilled in copper pot stills and laid down in ex-bourbon and oloroso sherry casks, it is then finished for around two years in Pedro Ximenez sherry butts, deepening the dried-fruit character and adding a syrupy layer of dark sugar.
Bottled at 46% ABV, it is presented without chill filtration in recent releases, which preserves the oily texture and fragrant aromatics that decades in cask have built. The Old Bushmills Distillery, near the Giant's Causeway in County Antrim, has been continuously producing single malt for over four hundred years, and a 25 Year Old from anywhere in Ireland remains a genuine rarity.
This is not a whiskey to rush. The sherry influence dominates without smothering the malt, and the long maturation has rendered the oak into something polished rather than astringent. It has been recognised repeatedly at international competitions and is regularly cited among the finest Irish single malts on the market.
A celebration dram in every sense — pour it for milestones, share it with someone who will appreciate the quiet weight of twenty-five Irish winters in the glass.
