Tasting Notes

Nose

Honeycomb, fresh juicy green apple, ripe pear and toffee pennies. Ripe honeydew melon and sweet floral notes — lilies in bloom — with dried ginger and dry vanilla. A generous, inviting nose.

Palate

Smooth and light-bodied with toffee and slight oak spices. The honey and biscuit flavour sweetens the palate pleasantly. A bright, juicy quality that integrates the fresh woody touch from the Bimber cask finishing.

Finish

Fairly short, with honeyed warmth and a gentle oak fade. The biscuit character lingers pleasantly.

Bimber Apogee XII takes an unusual approach to blended malt. The whisky begins as a blend of Scottish single malts, aged for twelve years, which is then finished in casks that previously held Bimber's own London-distilled single malt. The Bimber cask finishing adds a layer of the distillery's house character — that distinctive honeyed, biscuity quality — to the mature Scottish base.

The concept is clever. By finishing Scottish malt in their own casks, Bimber creates a bridge between the familiar world of aged Scotch and their own distinctive London spirit. The twelve-year-old Scottish base provides the maturity and structure, while the Bimber cask finishing adds a signature that connects the whisky to North Acton.

At 46.3% and £49.95, Apogee XII positions itself as an affordable, approachable blended malt with a genuine point of difference.
